Your documentation could include complete descriptions of each of the server configurations, both hardware and software. It could also include documentation of your workstations hardware and software.

Probably you should have documentation of all purchased software licences, including versions.

Probably you should have documentation for your backup procedures and other regular network administration procedures.

You should also have documentation of your disaster recovery plan -- what would need to be done if each server fails. For example, start with a fresh server, install the appropriate software, restore the appropriate backup of user data, and share the appropriate resources.

You should have documentation of what permissions need to be applied to what resources, and which users need to have those permissions.

Probably you should have a cabling diagram.

You should have documentation of your network printers and other devices including configuration information and consumable requirements (such as toner cartridges).

You should also have documentation regarding support contracts or other support arrangements, which should include who to call should any component fail (server support/warranty info, who to contact for cabling problems, who to contact for printer faults, faulty workstations, faulty monitors, software problems, etc.)

In addition to previous comments, I think managers like Graphics. So a copy of Visio would be nice to chart everything out real pretty for them.
If you cannot purchase one you can get a 60 day trial.
When you do your documentation - remember "Say what you do and do what you say".
And always send yourself a BCC of all pertinent emails.
