Why does an installed printer show up on my server as viable, but when I go to my desktop it's not shown?

Check the name of the printer. If it is more than 12 characters long it will not appear on the clients browsing for that printer. You should be able to install the printer with the full name and path though....

Rename the printer (12 characters or less)is the best solution to this problem.

A printer name over 8 charaters can't be shown on a Win95 client (whcih is stuck with 8.3 filename limitations).

Something else that might trip you up is forgetting to install the drivers for ALL of the different workstattion OS's you have. For example, if you install ONLY the NT drivers, only NT workstations will "see" the printer. If you "share" the printer and install Win95 drivers too, those workstations will then "see" the printer.
