PeopleSoft or Oracle?

What about database software like PeopleSoft or Oracle or Programing languages like SQL or Java? This would help me as I am getting ready to start a new helpdesk! A new roleout on PeopleSoft!

Which apples to compare?

A lot of assumptions required to answer properly. PeopleSoft and Oracle are companies. Each company has a lot of applications that run on top of database. Oracle also has a database, whereas PeopleSoft uses any number of databases. SQL is a database language. Java is a programming language.

So to answer your question, you've got to identify what you're interested in: the companies, specific applications, maintaining or administering applications, extending the applications.

Based on the 'helpdesk' comment, I'd suggest learning the application first, 'cause that's what the users are going to want help on. Let the DBAs, SAs and programmers worry the background chatter. Eventually you'll want to move into either - make it work better (SQL/Oracle) or make it work different (Java).
