Can I get some information on how to manage ports in a secure environment? What are the ports that should be left open and closed?

Not sure about which ports should be open or closed, but a visit to the Symantec (Norton) website www.symantec.com to run their system security checker will analyse your TCP/IP ports and tell you of any open ports and security vulnarabilities on your system. Remember that any messaging applets, such as ICQ or MSN Messenger open up ports which may be used to maliciously access your systems.

Basically it would depend upon what applications you are running.
A good site for information about securing ports as well as testing them on your system is www.grc.com - this site includes a firewall tester as well as a port scanning service.
