.pst file on a server versus exchange mail boxes

I have all my mailboxes in Exchange Server, but I am wondering if I would be better off using .pst files and just storing them on the server. It seems that would make individual mailbox recovery a lot easier and would avoid the problems of hitting Exchange Server file limits (16gb I believe). Can anyone shed light on why one method is better than the other?
