Recording Software

I’m looking for software that can record (video) games. (ie Spiderman, EverQuest, GTAIII, etc)
I have a Dazzle and know I can record to TV and then record to Dazzle in AVI format. Isnt there software that can record on the fly. Any help that helps will be awarded points. Thanks in advance.
