reinstall server. How to backup data?

Currently i have 1 Win2k Server running as data storage for my company. The server performance getting worst lately. I plan to change the server to Win2k advance server. But the problem is how i going to backup all share drive setting, folder permission, user account, and policy setting. There are around 200 folder that already shared for users to backup data, and every folder have it own permission set. How to backup all those setting and apply to the new server without have to ser one by one.Please help
