Remote User profile setup

I have a windows 2000 sbs. I also have a server named REMOTE that we will use for all users to dial into remotely. I’ve read everything possible but am very confused on the difference between setting up users under Term Services in their profile or through the actual .RDP file. I created a mapping to a specific folder on the server that users will need access to. I created their profiles in Active Directories with a .bat file to the mapped drive and then created an RDP that automatically opens Excel when they dial in. I even put the Excel program in the mapped folder (probably not correct) but it works for now. How do I make it so that they cannot access the c drive or network neighborhood within excel? They can only have access to that one specific mapped drive????
