If you are going to be changing partition size, and the machine is just a mirror and not spread across partitions, you can try something like partition magic to resize the drives. Otherwise, prepare for a good full backup, resize, reinstall and restore.

I know I can use partition magic but what I really would like to do is resize the boot partition and clone that onto a bigger drive and create additional partitions

Why don't you create a stripe set. With your leftover disk space if this is possible.

I think what you need to do is clone the entire hard drive FIRST onto a larger drive and THEN use Partition Magic to manipulate the partition size of the boot partition on the larger drive. One caveat, though - make sure you get a version of Partition Magic that is certified for use on servers, because you KNOW Microsoft will not support this so if you have problems, you'd have to rely on the Partition Magic people, not MS to help you out. Hope this helps!
