Can you install and use a single SATA HDD, or do you have to have two or more drives installed?

Yes, you can install just a single SATA HDD.

You can use single SATA drives just like using a single IDE drive.

I am going to assume that you have one of the many motherboards where the SATA controller is integrated into a RAID controller.

In order to use your SATA drive as a boot drive, you need to set up the drive as a single drive RAID array.
