Server hard drives upgrade

I would like to replace the three 18 gig SCSI hard drives in our Compaq Proliant NT 4 server with three new 36 gig drives to double our total disk space. Is there an easy way to do this using cloning? If not, what is the best way to move all of the current data from the old drives to the new drives and minimize downtime.
