I have 2 Windows NT 4.0 Servers with Service Pack 6a and all of the latest and greatest updates installed on them. Every time that I open up Event Viewer on either server the services.exe will max out the processor to 100%. The only way that I can restore the system to a normal state is to reboot the server. Any thoughts or suggestions would be greatly appreciated.

Let's take the virus route here.
Does the NT4 machine have all the NT4 post SP6a patches that you can get from Windows Update? I would start there.
Then run an updated anti-virus scan.
Make sure it does not have Blaster or any other virus, and that it is up-to-date on patches.

Did you change the default cache size for the Event Viewer files? Are they way too big? Try safe mode and open one to see what size it is and modify if incorrect or too large. You can also do a search for files larger than 2gb and see if one of them is found. you'll know when you see them.

Good Luck!
