SMTP server

Our old SMTP gateway server is dieing, and I need to build another one. Can I build a second one and just keep the cost at a lower no. incase the old one fails and the new one would kick in. Where are the white papers or steps to do this. I am new at this, so please be kind (exchange SMTP gateway for dummies)Thanks.
