1. On the 'SORT ORDER' option screen, select one of the values (DICTIONARY, CASE-SENSITIVE, CASE-INSENSITIVE, UPPERCASE PREFERENCE, ETC). There are a number of different options to choose from.

2. Unicode collation refers to the number of different characters that will make up your character set, usually depends on your locale (general, japanese, korean). General usually works for most US instances.

You can find descriptions of these in books online under Installing SQL Server->Running SQL Server Setup->Installation options.
