Storage Streaming

I am currently setting up two streaming media servers and would like some info on how best to manage storage. As we are a University students need access to upload videos etc to the servers. Now each server has 800GB worth of storage. 2x200GB IDE drives and 2x200GB SATA drives. They want pure storage so no redundancy. Each user will have a quota of 10GB. How can I organize the home directories over the two servers while making it easy for the students to remember how to connect tot the servers. Servers are running Windows 2003 SP1 standalone servers. 1 server is running Helix Universal Server the other as backup Windows Media Services.
Helix will be the preferred Streaming server. Now if I create home dir on one HD than that allows only approx 19 users per HD there are going to be about 40-60 students in all using these servers.
Any ideas
