We have a new hospital built with steel studs. We are needing to wall mount workstations next to each bedside for nurse/physician documentation. Our maintenance staff are balking at this because they don't think that there is a viable longterm method of doing this without the workstations breaking loose with time. I maintain that someone somewhere is doing this. Would appreciate any advice you can give me.

Steel studs are just stamped metal. It's true that using something like traditional drywall screws would not be ideal since it would be easy to strip a screw.
There is a product for mounting TVs on walls called 'snaptoggle'
