Switch or Hub: That is the question

I have a 60 client network. All clients are 9x connecting to NT4 servers. I also have an AS400. My problem is this: We have a new server and through running NetBoy to analyse load and traffic on the network, I have realised an average load of 2000%.This is obviously a problem, so I need to look at topology. The new server has two NIC’s and a third redundant NIC. The AS400 has one NIC but we’re seriously looking at installing another. The servers will all be connected to switch ports and the clients connected to hubs determined by workgroup. Printers are the problem as all printers are used by AS400 application and Windows applications(eg. Excel, Word). Where would be best to connect them to? Switch or hub? Workgroup hub or specific printers hub? Are there any network design tools to help with this? (I’ve forgotten all I learnt at Uni about OSI etc). Please help! Thanks.
