Tracing an e-mail

what method or tool do I use to trace e-mail from a specific domain to a user on my network. i’m using Exchange Server 5.5 (lastest sp). mail is passed through server and dropped on client station’s .PST file in Outlook 2000. Log files? Server database? PST file that hasn’t been purged?
