Two cat-5's from 1 PC

Out of sheer curiosity, would using two NIC connections to my LAN from 1 PC double my bandwidth?

No. Each would have its own IP and MAC address, and they are not aggregated.

Yes (potentially). 2 NICs would double your "potential" bandwidth although the OS would need to support this, although I have no idea which OSes do, or even if any of the desktop OSes do. I do however know that some Server OSes can do exactly this.
