Wikipedia isn't perfect, but its not bad on subjects like this;

http://en.wikipedia.org/wiki/Enterprise_resource_planning

It also has a list of vendors and kinds of software.

Accenture is not a vendor of ERPs. They are a consulting company and are often hired to assist in implementing ERPs.

There are plenty of ERP jobs - its tough to crack though because most people setting up ERPs want someone with experience. And as ERPs get more complex, there are fewer transferable skills - you become more and more a subject matter expert on one ERP, and less able to work on others, even though they all have similar functionality.

Some ERPs like SAP are very rigid in how they must be implemented. Others like Oracle are very flexible and customizeable.

Thats a start but use google - there is lots of information out there.
