What’s the best practice for backing up 50 users Outlook .pst files

I have approx. 50 users. I’m looking for a way to archive the users pst files on one of our servers. Is there an easy way to do this that I’m missing somewhere? We use Exchange 2003 with XP clients connecting to outlook 2003.
