Where does Windows get information for the Most Frequently Used list?

I’m trying to clean up some applications on machines in my company, and I’d like to remove licensed programs(visio, project, etc) from machines whose users haven’t used them in the recent future or for a certain amount of time.

I know Windows XP shows how frequently applications have been used in the Add/Remove Programs list(rarely, frequently, never) and obviously Windows uses some metric to decide what order to put programs in the MFU portion of the Start menu.

Anyone know where this information is stored?
