Which "free" server virtualization product is the best?

We are currently running all of our production servers in a virtual environment using the free version of VMware Server v. 1.0.7. Everything is running fine and performing fine, but I really need to migrate from such an old version. I have a small user base (50 users over 3 shifts). I'm running Windows Server 2003, SQL 2008, Exchange 2003, AD, etc. I have 6 virtual servers, running on 2 host servers (IBM X3550's dual quad core, 16 GB RAM, RAID 5 - no SAN).

We are currently licensed on Windows Server 2008 Enterprise. I've had people recommend the free version of Citrix Server. I could go the Microsoft Hyper V route (I'm currently licensed). I'm looking for recommendations on which path I should take...Microsoft, Citrix, or VMware?

Any recommendations would be appreciated!
