If you have the license for both..

Hi if you have a license for both, its really up to you, Me personally would go with server 2008, because of the additional features it support with windows 7 clients. But It really depends on your preferences.

It is still more advanced than 2k3, right?

Not really much to sort out, considering the minimal roles for this server. Possibly your biggest concern with R2 is that it is 64-bit only.

Otherwise, more than you ever wanted to know about 2k8:

Another Option

Everything you describe as requirements for your server are also available free in Linux.

File services with Samba, print sharing with CUPS; you'll find it's easy to set up and there is plenty of help available - just search "howto linux [topic]"
