Ok, so Enable Logging is checked for your web site, and you chose the default log type (W3C Extended). Let's make sure the rest is ok.
Click the Properties button next to the log type. On the General Properties tab, there is something selected under New Log Time Period, right? (Daily is the default selection) Ok. Next, under Log File Directory, do you have the default path, %windir%\system32\logfiles?
And for each different web site you have defined on your web server, the subdirectory will be different. So, the Default Web Site will be in %windir%\system32\logfiles\w3svc1
The Administrative Web Site should be in %windir%\system32\logfiles\w3svc2
So, if your site is another web site, it could be in %windir%\system32\logfiles\w3svc3 orso on. You get the point. Make sure you check for the right W3SVC# directory for your web site. I made this mistake once myself!
Other than that, you can try the Extended Properties tab, and make sure that stuff is selected.

The only other thingI found was that there was a problem with Convlog.exe, the application that actually does the logging, in Windows 2000. Service Pack 1 fixed this problem. Make sure you are running at least SP1.

Hope this helps.
