So I am trying to get back one day to retrieve lost data, and System Restore cannot go back one, two or three days, all of which are highlighted restore points in the programme.

You cannot recover lost “data” by doing a system restore. System restore will only restore your system settings, drivers etc and undo Windows updates or other software updates etc
The reason why you don’t see any restore dates is I assume because system restore is turned off, if you would like to tell us which operating system you are using we can advise you how to turn it back on, otherwise refer to the previous reply for details of file recovery software
