Windows Explorer additional columns

Sorry, I have a german version of Windows 7 and so my translations are probably not quite correct.
If I ricght-click on the NAME-column of the Windows Explorer I get the option to add FURTHER columns in my DETAIL view. I like the columns DESCRIPTION and RATING.
My question : how can I fill these
columns with data ?
For instance, if I open the PROPERTIES dialog on right-clicking on a .jpg-file and choose DETAILS I can edit the columns there.
But this doesn't work with .txt,.pdf or (more important) .exe-files.
Are there special programs which do that ? Or can I tweak Windows to let me edit the column data ?

Metadata

Most of the additional columns are metadata in the files. A couple of them, like Owner or Author may be filled in automatically at creation time.

TXT files aren't going to have much besides an owner.

PDF files can have metadata set, go to File...properties in Adobe Acrobat (not reader) to set them.

Many MP3 files will have much of the metadata set already.

EXE files are set by the compiler - again it's "Properties" of the program. You probably can't add them, because many programs have internal checks to see if they have been modified, like a virus would do.
