Windows Server VM – Home Lab

I hope someone can help me.
I am trying to increase my knowledge of servers and I’ve created a home lab environment to teach myself, but I’m not sure what to do with it. I’ve got a DC with DHCP and DNS servers.
I’m trying to figure out what to do with it or what sort of test environment I can create with it… the aim is to teach myself about the role of a Infrastructure Engineer, I come from a 2nd line support background and I have done a few 3rd line roles but I want to move into it full time.
Can anyone help with what sort of things I can do with my server labs please.

Windows Server VM licensing question

My understanding is that the Standard license of Windows Server 2012 or 2016 permits you to run 2 VMs of that version.https://essaywriter.fun/
If you have multiple hosts, does it matter which host created or hosts the VM, or does only the total number of VMs relative to hosts matter?
If the origin of the VM matters, is there some way to check which host created it?
