Is there any way to tell who last modified an MS Office document?

Is revision tracking enabled?

If you are tracking changes, limit edit access to the document, and people use their own user accounts to do the editing, yes.

If you are on a domain network and use AD and have some granular logging, yes.

Use the Document Information Panel to view or change the document properties.

Click the Microsoft Office Button , point to Prepare, and then click Properties.
In the Document Information Panel, click the arrow next to Document Properties to select the set of properties that you want to view (for example, Advanced Properties).

In advanced properties, you'll be able to see the modification date/time, but not who actually did the modification. You must enable revision tracking for that.
