Anything in the event logs?

such as the 'server' service crashing?

In general, when shares go away, either there's something nasty going on on the LAN (e.g. a broadcast storm) or one of the services in the host has crashed.

Other potential issues are any AV or Firewall solutions on the server....Symantec Endpoint Protection?

If there is nothing in the event logs, my next stop would be looking at the port counters of the ethernet switch for things like CRC errors.

The free protocol analyzer Wireshark can be very helpful to determine if the issue is that SMB requests are not getting to the server versus the server is not responding to those requests.
