just type
at the enable prompt

Routername#configure t
Routername(config)#username NewUsername privilege 15 secret 0 YourPassword
Routername(config)#no username Oldusername
Routername(config)#exit
Routername#show start

the starup config should now have your new username and have deleted your old username
