Configure DNS/AD Without Static IP

I have a new server for tinkering on and I want to know how to correctly configure it?

I setup DynDNS and everything works perfectly with remoting into it via domain name etc but:

1.) Exchange claims the domain doesnt exist but I know it does. I believe this has something to do with my poor DNS configuration

2.) The server has 8 Gigabit Ethernet Ports and I will use it as a router/domain controller so all other systems are connected and controlled.

I might add a business account to it this week which has 5 static ips but till then how do i configure the DNS server correctly? Do I tell it to use ip 127.0.0.1 or the NIC ip of of 192.168.2.11?

Running on server
1.) IIS
2.) App Server
3.) DNS
5.) AD
6.) IAS
7.) MOM

Server Specs

2 x Quad Core 5420s
24GB Memory
4x300GB SAS 15k
2xIntel Quad Port Gigabit Copper Ethernet Cards

Any help would be great
