Configuring Exchange Server

I am a student intern at a company and I plan on setting up Exchange server to handle out incoming and outgoing mails. Currently the mail service is through a company mainly because they host our company website. We have a server running Windows Server 2003 SBS. Right now, setting up new e-mail requires calling the company that's hosting the email to activate the e-mail and when you add that e-mail in outlook you have to add a pop mail and an exchange server mail. I am confused why that is set up that way and also is it posible to set up exchange server to be our mail server and eliminate the hosting by this other company? How can I accomplish this task? Please help.
