Is there any way to avoid the Network/System Administrators from reading my e-mail being sent out?

Depends on your email client, but you should look into encryption.

Speaking as a Sys Admin, I don't have the time or interest to read your email.

Dpends on the email client and the rights and permissions that you have on the network.

Go to www.thawte.com where they issue free email certificates, called Thawte personal freemail. After you have completed the process of signing up you'll have an email certificate. You'll have to convince the people you send mail to to get them also, then you can freely send encrypted mail to one another. It also ensures the sender is definately who they say they are.

The EASIEST way to do this is use a web based mail service such as Yahoo. No mail processing will occur inside your organization, thus nothing for the Network/System Admins to look at. Of course this depends on whether you have internet access or not.
