Exchange high availability

currently we have one 2003 exchange server on-site. the server is ancient and is getting critically low on dis space. So we've decided to look at upgrading the server. At the same time as moving to a newer server with higher capacity we wanted to implement some sort of high availability/DR set up.

the plan is to have a single server on-site and a second server in a data centre on the other side of the city. We want automatic fail-over in the even that our in house server fails.

being new and inexperienced in exchange I was thinking of using a product like double take.

what other options do we have? Could we for example put an exchange 2007 server in-house and migrate/upgrade the mailboxes and info store to this and then have a second 2007 server off site with data replication between them?
