How to create an “anonymous” e-mail box in Exchange 2003?

For reasons of complying with corporate compliance rules, my company has asked me to create an e-mail box within Exchange Server 2003 that would “anonymize” the sender’s name/e-mail address – and when the e-mail is reviewed via OWA or opened by an authorized party, the sender’s name or e-mail address would not be shown or be replaced with something else. I have looked around and I haven’t found a clue on how this could possibly be done. Thanks in advance for any input you may offer.
