Loss of flexibility in Tables, etc.

In the 4/2/3 MsOffice Suite Tech Republic tips, tables are mentioned and how to keep all columns aligned, or the same size, etc. It used to be a lot easier to have one cell a different size than another, It is almost impossible to do so now, and if one tries to set the cell properties and copy to another, it really screws up the table. I fail to understand why in "progress" we have flexibility taken away, not more given.
I see this in e-mail programs as well--we "graduated from cc:Mail to Lotus Notes, yes there are more options available in Notes, but much of the flexibility of cc:Mail was not carried over to Notes. Too much of this is done in the name of "progress" It is almost like the programmer says " no one would want to do this, so I will take it out of the program"
