Migrate from SBS2003 to Server 2008 DC and seperate Exchange 2007 Server

I am looking to migrate from SBS2003 to a Server 2008 DC and seperate Exchange 2007 Server.

I am unsure of the best way to do this.
I have read several posts suggesting how to do this, but only with Exchange 2007 installed on the DC (from my understanding this is not best practice).

Does anyone have any experience of doing this or any pointers?

Migration

1. Install Windows 2008 on a new server, run ADPREP to update the scheme for 2008 AD. Run Dcpromo to make it a DC and migrate the FSMO roles across used AD management consoles.

2. Install Windows 2003/8 x64 on second server and install Exchange 2007 (you need the Hub transport, Client access and mailbox roles - typical install). Then migrate the mailboxes from the SBS 2003 to Exch 2007 server.

3. Once satisfied with migration to new servers. Uninstall Exchange 2003 from the old SBS server and then run dcpromo to demote the server to a member server.
