I have patched cat5 for years, however now I am being asked to do phone as well, this is what I have:
Cat5 and phone cables have been run. I will terminate them with the proper pinout and connector at the wall. At the patch panel I would know that I will simply patch the cat5 to a router/switch. But what do I do with the phone cable? It there a panel like the cat5 that I can use to punch all the phone cables into then run a single phone cable to the phone box?

There are a mass of connectors depending on the type of Phone System in use in the Phone Box you just screw/crimp the leads to the correct connectors.
The other thing you may require is Insurance in case you do any damage tot he Outside Telco Companies Equipment. Here you need a heap of insurance to cover any damage you may do to the Exchanges if you mess up. Not sure about where you are but to work on any Phone System here you have to be Austel Approved to get any sort of Insurance. Austel is the Government Telephony Supervising Body in Australia by the way.
