Problems with POP3 connector and external access

I’m attempting to configure a very basic server for my small company to use so I can begin work on a brand new multi server network setup. The machine I have purchased is running Server 2003 Standard and Exchange 2003. The existing server that this is replacing is long overdue it’s retirement and is working at about 200% capacity which is the reason for this interim solution!

My problem lies with Exchange. The soon to be retired machine currently only handles internal emails, all other emails are hosted externally by a third party. Each user has an account for Exchange and an external account configured in outlook which I see as being less than ideal.

The new box has been setup to download all emails from our external server using a POP3 connector. This works fine and I can also quite happily email externally using our ISPs SMTP service. The problem comes when I need to email users who are only accessing their emails outside the office. The server is setup to handle all ourdomain.com messages and throws up an error message if anyone attempts to email to an email address at ourdomain.com that is not in the AD. If I then add them to the AD, the emails are thrown straight to our internal server.

I altered the Exchange SMTP setup so that all users were set to ourdomain.local but their default address were set to ourdomain.com. Now all emails are sent to our external servers and the problem of contacting those external users has gone.

Sadly, this configuration has broken the POP3 connector as it is unable to route the ourdomain.com emails to the ourdomain.local accounts. Is there any way that I can revert back to the original SMTP configuration of ourdomain.com but flag specific emails to be sent to the external email server?
