Remote Desktop w/ Internet Explorer

We are having some problems with Internet Explorer using our Remote Desktop Users.

My Problem:
When the user goes to a site and access a "E-mail Link" from that website it opens either outlook express or outlook depending on the setting in internet explorer properties under the program tab. The problem lies with different profiles use outlook or outlook express. From what i gather, the "Appserver"(RDP Server) is set to outlook express by default and when i change it to outlook, the default for all the users is set to that also. Is there a way to change that per profile that i'm not seeing? i have the application data and documents set to redirect to another server so if there is a file inside there that i need to change, please help me find it.
