SBS 2003 Transition/Migration to 4 Full Std Servers

Hi! My company is moving from SBS 2003 Premium to the following standard version servers:
Server1: Win 2003 Std (domain controller and file server) - new machine
Server2: Win 2003 Std with SQL Std w/ 2 Processor Licenses - new machine
Server3: Win 2003 Std with Exchange 2003 - to be installed on old SBS machine
Server4: Win 2003 Std with ISA 2004 - new machine

I split up the work in such a way that I focus on one server per weekend. Here's a summary of what's been done. SBS 2003 Transition Pack has been applied on the old machine. SQL has been moved to a new machine. All databases are fully functional. The new domain controller has already been promoted and all FSMO's transferred. All shared drives have already been moved as well. DNS, DHCP, WINS, GC have all been moved to the new domain controller. The old SBS machine has been demoted.

My problem is with weekend #3 where I need to reformat the old SBS machine to have a clean install of Win 2003 Std with Exchange 2003. Here's my tentative plan. Please let me know if there's a better way to do this:

(1) Run Exmerge to export mailboxes to .pst files.
(2) Backup public folders using Outlook.
(3) Backup Exchange databases.
(4) Remove Exchange attributes from users in Active Directory.
(5) Uninstall Exchange from machine.
(6) Remove Exchange from Active Directory using "setup.exe /removeorg".
(7) Reformat old SBS and install Win 2003 Std with SP1 and patches.
( Install Exchange 2003, SP2, etc.
(9) Create mailboxes in System Manager.
(10) Import mailbox data from .pst
(11) Recreate public folder store.
(12) Restore public folder data from Outlook backup.
(13) Create Exchange attributes for users in Active Directory.
(14) Make sure all mailboxes match the correct users.
