Server upgrade for small business - Virtual?

We are a 14 person Architectural firm and we are looking at upgrading our server - I am getting conflicting information about what I actually need for our Server upgrade. I am now convinced that a Virtual server is the way to go but I'm confused about redundancy and off site mirroring. Any help or reccomendations from anyone is a step in the right direction. thanks.

We have VMWare ESX 3.5 in a Windows 2008 Domain, a 143 TB SAN.

We have about 50+ Virtual Servers and 10 ESX boxes (HP DL380s) all connected to our SAN. If an ESX box dies we can easily move VMs to another ESX host with minimum download, our san supports mirroring so we can mirror data to another SAN offsite, so it makes it easier to setup, manage, save power and upgrade costs and do DR more effectively than with previous physical server setups.

A lot of companies are doing this esp. if you have a multi-server setup. It is less effective for small single server setups.
