Sharepoint, workstation and users

Background:
Wss 3.0 running on Windows 2008 web server edition in a workgroup.

We are a small company with no AD running at all and will use WSS for
internal and external collaboration.

I am aware of how to create users – creating them locally on the
server then adding to the site, my challenge is related to email.

When adding a user to WSS you can opt to send an email, however I am
unable to find any way of adding the email-information to the local
user object on the server.

What I can do is to create the user in WSS, opt to not send an email,
edit the user info in WSS and then send a manual email.

Is this how it has to be when running in a workstation or am I missing
something here?

In addition, this is a hosted dedicated server running WSS 3.0 – if AD
gives me some additional user properties fields – like email
(customern…@customer.com), would there be a big problem running WSS
on a domain controller.
