It's totally based on the policies and procedures of the company involved. If they give out a paycheck to someone not authorized by the employee or without the knowledge of the employee (or ex-employee), they leave themselves liable to legal action.

Let's say your liable if it is lost. Your best option is to mail it certified to the employee's residence.

When leaving a company, you should also leave your current address for your Income Tax forms (I always forget if it is W-2 forms or w-4 forms) to be delivered at the beginning of the new year.

You need to send the check to the ex-employee and only the ex-employee as registered with a return reciept. Someone, namely the ex-employee, has to sign for it and you will get a legal receipt for the check releasing you from further claims of non-payment.

Also, make sure that you get a copy of the endorsed check from your bank and file it with the reciept and other supporting documentation.

Anyone designated to act as the x-employees power of attorney, can also legally pick up the check for the x-employee. But make sure the power of attorney is notorized and signed by a notory public and a witness. Keep a copy of the power of attorney for your company's record. Even if its the employees wife or parent, your better safe than sorry later on.
