Where is an IT newbie to find work?

I graduated college recently with a degree in psychology and decided to change my career path to IT. I do have a great IT Internship for the summer but I am looking for a part time job alongside that internship. I have applied to various places and have been unsuccessful. Although posts mentioned that the position had been entry level for college grads or new to IT this has not been the case. I have found myself on the phone with several companies saying that I have no experience with servers and networks although I am a desktop computer wiz (I had a small college business building and upgrading computers for game freaks). Their reply is to work for them in a free internship position which I already have. How can I find some work relevant to the IT field? Why is every entry level position trying to hire someone that has 3 year IT experience?

I would leverage off your pyschlogy background someone. In this day an age IT is not enough. Try looking for psychology + IT jobs. You will have much better job security long term believe me.
