Ubuntu or CentOS

Depending your preference for example they both have a GUI, but Ubuntu is made were any user can run server. Also, Ubuntu does have live support for there server. I'm not sure what is the support for centos. If you want to be in the safe side go with Ubuntu.

Ubuntu isn't as Secure a Distro as others from the Nix Family so if you need to secure it down Ubuntu isn't for you or your needs.

A lot here depends on exactly what the server will be doing and in what environment. For instance running Ubuntu as a Cloud Base is perfectly OK as there is no real security possible but if this server was in a Medical Practice holding Patient Records that's a different story.
